Beat blood pressure blues with angel food cake

Preparation time 20 minutes; Cooking time 50 minutes; Serves 12

Ingredients:

Fruit

  • 1 bag (600 g/20 oz) frozen strawberries, thawed
  • 125 ml (1/2 cup) orange juice

Cake

  • 12 large egg whites, at room temperature
  • 6 ml (1 1/4 tsp) cream of tartar
  • 2 ml (1/2 tsp) salt
  • 275 g (1 1/4 c) sugar
  • 45 ml (3 tbsp) grated lemon zest
  • 5 ml (1 tsp) vanilla
  • 250 g (1 c) flour

Directions:

  1. Combine strawberries and orange juice in large bowl. Refrigerate
  2. Preheat oven to 160°C (325°F). Beat egg whites, cream of tartar and salt in large bowl with electric mixer until foamy. Gradually beat in sugar, 30 millilitres (2 tablespoons) at a time, until thick, soft peaks form. Beat in lemon zest and vanilla
  3. Gently fold flour into egg-white mixture, 50 grams (1/4 cup) at a time, until incorporated. Spoon into an ungreased 25-centimetre (10-inch) angel food or tube (Bundt) pan. Bake until top springs back when lightly pressed, about 50 minutes
  4. Invert cake pan to cool. If pan does not have legs, hang pan over the neck of a bottle. Cool cake completely. Run metal spatula around edges and centre of pan, then invert onto cake platter. Serve with strawberries and juice.
