Beyond beef: 4 easy ways to take your BBQ game to the next level

January 29, 2015

Whether you're trying to squeeze more veggies into your diet or just want to break out of a BBQ rut, it's time to start thinking outside the beef box with recipes as good as any you've ever tasted. Here are four ideas to take your BBQ game to the next level.

Beyond beef: 4 easy ways to take your BBQ game to the next level

1. Give veggies a go

Here's a groundbreaking idea...instead of using your BBQ to cook food like steak, chicken and burgers, have you ever considered veggies? Yes, veggies on the grill!

  • Large portobello mushrooms grill up beautifully and can be stuffed with diced veggies, cheese or even ground beef.
  • You can do a similar dish with large red peppers. Just cut some peppers in half length-wise, scoop out the seeds, stuff and grill.

2. Get ready for pizza night

The tricky part with BBQ pizza is ensuring the temperature is high enough and stays constant.

  • It must be around 220 °C (430 °F) in order for the pizza dough and toppings to cook through.
  • You also need a BBQ with a hood, although you can improvise by using a large upside-down roasting pan.

Use a thin pizza base and cook it part-way through before adding your toppings. Then watch it carefully until it's completely cooked. The result? A perfectly crisp–yet–chewy and delicious pizza crust.

3. Enjoy an early-bird BBQ

Breakfast on the BBQ? Not as crazy as it sounds! Many BBQs have a flat plate section, so you can easily cook up a pancake breakfast.

  • When the pancakes are halfway done, throw on some bacon.
  • Take it to the next level by grilling some banana slices on the flat plate too, but watch them carefully. The sugars in the fruit can make them burn easily.
  • Crack some eggs on the flat plate, throw some bread on the grill, or wrap croissants and other pastries in foil to warm them up.

Practically all of your breakfast favourites can be cooked on the BBQ – it's a one-stop breakfast shop.

4. Spoil yourself with something sweet

Grilled peaches and pineapple are divine on their own or served with a little ice cream.

  • Simply slice them into large sections, sprinkle with a little brown sugar, or give them a squeeze of lemon or lime juice, and grill until soft.
  • Try an easy all-in-one dessert like grilled banana boats: Slice a peeled banana down the middle length-wise, then stuff with chocolate chips, mini marshmallows and chopped nuts.
  • Wrap in foil, and grill for a few minutes until the chocolate has melted. The foil doubles as a dish, meaning minimal clean up but maximum taste.

After trying a couple of these dishes, you'll understand why the BBQ is such an indispensable cooking tool!
